Better-than-Mix-without-being-from-Scratch Pancakes

You know those little packages of muffin mix that just require you to add water, in particular the ones distributed by Betty Crocker? It's okay to use them for their intended purpose, but a much better use for them is pancakes. They come in all sorts of flavors and beat the pants off of your run of the mill pancake mix. Flavors include:

Apple Cinnamon
Banana Nut
Chocolate Chip
Lemon Poppy Seed
Triple Berry

Just add 1/4 cup of applesauce, an egg and 1/2 cup of flour and you can serve 2-3 people depending upon pancake appetite. And stack them together in some foil to keep them warm while you cook!

Olive Tuna Pasta

It's the beginning of the month, so that means it's time to go food shopping again. Before that happens, the pantry needs to be cleared out. And since necessity is the mother of invention...

2 1/2 Cups of (Cooked) Whole Wheat Egg Noodles
2 Tablespoons of Ken's Lite Olive Oil Vinaigrette
1 Can of Solid White Tuna
Black Olives
Canned Mushrooms
A Handful of Grated Parmesan Cheese

Load Up on Guns

One of the most prominent toys of my childhood was the Super Soaker water gun. Many a summer was spent fighting with the neighbors or those who dared to doubt my unrivaled arsenal. Swiss & Asparagus Chicken Rolls

Tonight's dinner:

4 flatten, thinly-cut chicken pieces
Swiss cheese slices
Seasoned bread crumbs
Lite olive vinaigrette dressing
Grated parmesan cheese

Preheat the oven to 375. Roll the chicken pieces in dressing and then lightly coat with the bread crumbs. Roll the swiss cheese and asparagus into each chicken piece and arrange the pieces on a greased cookie sheet. Sprinkle the parmesan over the top and put in the oven for 45 minutes.
